तीन बरस पहले मुझे अंगोला और नाइजीरिया जाकर वहां के आदिवासी कल्चर और खानपान को एन्जॉय करने का मौक़ा मिला था. जब वहां लोगों को जानकारी मिली कि मैं वेजटेरियन खानपान पसंद करता हूं तो रह-रहकर मुझे इगुशी के बीजों और उससे बनने वाले व्यंजनों के बारे बताया जा रहा था. एक दिन एक डिब्बाभर इगुशी के बीज मुझे सौंप दिए गए. ये बीज देखने में तरबूज़ या कद्दू के बीज की तरह दिख रहे थे. इगुशी दरअसल बिटर-मेलन के बीज थे, जिन्हें हिंदी में इन्द्रायण कहते हैं. इनका वानस्पतिक नाम Citrullus colocynthis है. वहां के स्थानीय आदिवासी इन्हें सुपर सीड्स मानते हैं. मज़े की बात ये भी है कि इगुशी तब खाया जाता है, जब उन्हें कद्दू के बीज आसानी से नहीं मिल पाते हैं यानी इगुशी से भी ज़ोरदार गुणों को लिए होते कद्दू के बीज.
कद्दू हमारे देश में भरपूर देखने मिलता है. कद्दू को कुम्हड़ा, कोडू आदि नाम से भी जानते हैं. बहुत से लोग स्थानीय नामों को लेकर बिकट बहस भी करते हैं, लेकिन मैं जिस कद्दू या Pumpkin की बात कर रहा हूं उसका लेटिन नाम Cucurbita pepo है. तो अब काम की बात भी हो जाए…
इनमें पेलकर पाए जाते हैं बायोऐक्टिव केमिकल्स
कद्दू के फल से क्या क्या बनता है, इस बारे में तो पब्लिक सब जानती है. मैं बताने जा रहा हूं इसके बीजों की ख़ासियत. इसके बीज आपकी सेहत को एकदम टनाटन रख सकते हैं. इसके बीजों में विटामिन्स, प्रोटीन्स, ओमेगा 3 और ओमेगा 6 जैसे कई ख़ास बायोऐक्टिव केमिकल्स पेलकर पाए जाते हैं. इसमें पाए जाने वाले एंटीऑक्सीडेंट कंपाउंड्स याददाश्त बेहतरी के लिए सबसे अहम हैं. दिन में कम से कम 25 ग्राम बीजों को ज़रूर चबाना चाहिए. कई क्लिनिकल स्टडीज़ भी यह साबित कर चुकी हैं कि डिमेंशिया और शॉर्ट टर्म और लॉन्ग टर्म मेमोरी लॉस वाली कंडीशन्स में ये ग़ज़ब काम करते हैं. बालों और स्किन की चमक बनाए रखने में भी ये बीज कमाल का काम करते हैं. जो लोग डायबेटिक्स हैं उनके लिए भी यह काफी फायदेमंद है.
आंखों के स्वास्थ्य के लिए भी हैं बेहतरीन
हमारे मध्यप्रदेश के आदिवासी इलाकों के भूरे और सफ़ेद कुम्हड़े के बीज ख़ासे प्रचलित हैं. लंबी बीमारी से उठने के बाद रोगियों को प्रतिदिन ये बीज दिए जाते हैं, रोगी को खट्ट से खाट से खड़ा करने के लिए. अब तक आपने मिठाइयों में, लड्डुओं में चिपके हुए इन बीजों को देखा होगा, पर अब आप चिपका लीजिए इन्हें अपने साधारण खानपान के साथ. मोबाइल और लैपटॉप पर काम करते करते आंखें औंधीया जाएं तो ब्रेक मारकर इन बीजों को चबा लीजिएगा, आंखों के लिए भी बड़े ख़ास हैं ये.
चार मगज या मगजतरी या मगज के बीजों की चर्चा हो तो चार सुपर सीड्स का ज़िक्र जरूर आता है. और ये हैं: कद्दू के बीज, तरबूज़ के बीज, खरबूज के बीज और ककड़ी के बीज. ये चारों बीज मगज यानी ब्रेन टॉनिक हैं. ध्यान रहे, आज के बाद इन चारों के बीजों को बिल्कुल भी न फेंकें. साफ़ धोकर इन्हें सुखा लीजिए, ग्राइंड कर लीजिए और खानपान में उपयोग में लाइए. जब-जब मगज के बीज दिखें आपको मुझे याद करने की ज़रूरत नहीं है, क्योंकि जब याददाश्त तगड़ी होगी तो मैं आपको अपने आप याद आऊंगा और मेरी ये बात भी आपको हमेशा याद रहेगी- भूलना भूल जाओगे जब मगज चबाओगे, समझे ?
